Eat-All-You-Want Soup - Janet Macon, Hy-Vee Dietitan


All You Need
1 head cabbage, chopped
4 ribs celery, chopped
1 large onion, chopped
1 large green bell pepper, seeded and chopped
1 clove garlic, chopped
1 (14.5 oz) can stewed tomatoes
1 (1 oz) envelop Hy-Vee onion soup mix
1 (46 oz) bottle Hy-Vee vegetable juice

All You Do
Combine all ingredients in a large soup pot. Bring to a simmer; simmer 1 hour or until vegetables are tender.

Yield Serves 15 (about 1 cup each).
