EDAMAME HUMMUS - Dawn Blocklinger, Hy-Vee Dietitian
Ingredients
1 ½ cups frozen edamame, thawed
¼ cup chopped Italian parsley
2 cloves garlic, finely chopped
2 tbsp lemon juice
2 tbsp tahini
¼ tsp sea salt
¼ tsp pepper
Preparation
Place edamame in food processor and pulse until finely chopped.
Add parsley, garlic, lemon juice, tahini, salt and pepper to edamame. Process until smooth, scraping down sides as necessary.
Serve with bagel or pita chips.
Yields: 10 servings
