Mother's Day Frittata - Stephanie Godke

1 bunch green onions chopped green part only
1 handful of spinach washed dried and chopped
4 large eggs beaten
1 cup milk
¾ cup flour
1 tsp. salt
½ tsp. baking powder
¼ tsp. pepper
3 TBS butter cut into pieces
6 oz. cubed Gruyere cheese

Put a cast iron skillet into the oven and turn it on to 400 degrees. While the oven and skillet preheat mix up the batter. Whisk the flour with the salt, baking powder and pepper. Mix the milk with the eggs and slowly add the wet to the dry and whisk until smooth. Add the chopped onion and spinach to the batter. When the oven and skillet is at 400 degrees add the butter to the skillet and melt it and get it to cover the bottom of the skillet. Pour the batter into the hot skillet and bake on the top shelf of the oven for 22-29 minutes until the egg is set and the edges are crispy. This puffed egg dish will fall after a few minutes so call Mom to the table before you take it out of the oven.
