Grilled Amana Strip Steaks with Spicy Summer Peaches - Chef Brandon Zawada

4-8oz Amana Strip Steaks
2 Tablespoons + More to Taste Chef Brandon's Thai Rubdown
3 Ripe Peaches, Cored and Chopped into Bite Size Pieces
1 Small Red Onion, Peeled and Chopped into Small Pieces
2 Tablespoons Hy-Vee Grand Selections Extra Virgin Olive Oil
2 Tablespoons Rice Vinegar (unseasoned)
2-3 Teaspoons Sriracha Hot Sauce
Cilantro Sprigs and Chopped Cashews for Serving

Procedure:
Preheat your grill over high heat. Liberally season steaks with Thai rub and allow to marinate for an hour. While waiting, combine peaches, onion, olive oil, rice vinegar, Sriracha and 2 tablespoon Thai rub, stir to combine. Grill the steaks 2-3 minutes per side depending on desired temperature, I prefer medium rare to medium (130-140 degrees). Cover and rest steaks before slicing or serving, about 5 minutes.

Assembly:
To prepare this perfect summer night dish, simply slice the steaks thin, sprinkle with cilantro and cashews, serve with spicy peaches and refreshing American wheat beer. This recipe would adapt great to chicken thighs, pork steaks or salmon filets or try adding different fruit like pineapple, papaya, nectarines or apples. Enjoy!!
