1 C. Fine cracked wheat
4 Bunches Fresh parsley
3 Lg. Tomatoes
6 Green onions or 1 yellow onion
Juice of 4 lemons
2 Tsp. Salt
1 C. Olive oil
2 Tsp. Dry mint or 1 bunch fresh mint leaves, if desired


Wash cracked wheat in water and then drain. Add lemon juice and let set 15 minutes.

Pick parsley from stems - wash, drain and then chop parsley very fine.

Dice tomatoes and add to cracked wheat. Dice green onions and add to cracked wheat.

Add olive oil and mix all ingredients in large bowl. Serve with romaine lettuce and pita bread as a side dish or a main meal.
